If you use SES as your outbound email relay with Odoo, you’re not going to have any luck receiving responses with a catchall account setup.
This is because Odoo uses the message-id field specifically to identify the object and Id that a particular message should be linked to. When the recipient responds, the message-id gets entered in the In-Reply-To email header. When the catchall process checks for mail, it parses the mail header looking for this back-reference.
The reason SES breaks this mechanism is that it by default overwrites the message-id field with its own – for its own tracking purposes. Other email service providers like mailgun do not do this. They use other custom headers to track the message.
